High-Protein Red Lentil Waffles

“Fuel Your Morning with These delicious High-Protein Red Lentil Waffles”

Our whole family loves these waffles, which we make weekly or at least every other week. We have adapted this recipe from a vegan red lentil recipe we found on Instagram.

Overnight soak:

(I soak them directly in our Nutri bullet blender, but you can put into whatever vessel you would like)
½ cup of washed red lentils
1 cup of milk of your choice
1-2 dates
A handful of nuts (2 Brazilian nuts are our favorite, but you can add whatever nuts you have. Walnuts add an omega 3 boost. We also like pistachios or cashews).
When ready to cook, add the rest:

¼ tsp cinnamon
¼ cup whole oats
1/3 cup of any flour
3/4 tsp. baking powder
½ tsp. baking soda
Pinch of salt
Dash of vanilla
1 egg

Blend all the ingredients in a blender. You do need a blender for this recipe to blend the red lentils. Fry in your favorite waffle iron.
